Healthy Nachos


Servings:  4

Level of Difficulty:  Easy

In our version of this Mexican favorite we've used low-fat sour cream and low-fat tasty cheese.
Ingredients
200 g corn tortilla (approx 5 tortillas) 
1 x 3 second spray of oil spray  
 200 g whole tomato canned in tomato juice, or fresh  
2 cups canned refried beans   
1 serve Taco Seasoning
75 g Light Cheese, Grated Reduced Fat
2  shallots, ends trimmed, thinly sliced   
2 Tbsp extra light sour cream   
Instructions

  • Preheat oven to 220°C. Spray tortillas with oil and set aside. Cut tortillas into bite size triangular pieces and place on a baking tray in a single layer. Bake for 6-7 minutes, or until golden brown and crisp. Take care not to burn, and set a timer.
  • While tortillas are cooking, combine tomato, beans and taco seasoning in a small saucepan. Heat over medium-low heat, then divide amongst 4 shallow bowls and sprinkle with cheese.
Place bowls under a preheated hot grill and cook until cheese has melted. Sprinkle with shallots, then serve surrounded with tortillas and a dollop of sour cream.

Superfood for the Body

Pumpkin is so jam-packed with vital                                nutrients that it is often referred to as a                            “super food”. Pumpkin is low in fat and calories and rich in disease-fighting nutrients such as:
Alpha-carotene-Beta-carotene-Fiber-Vitamins C and E    Potassium- Magnesium- Pantothenic acid

The alpha-carotene and beta-carotene are potent antioxidants found in pumpkin and are pro-vitamin. A carotenoids, meaning the body converts them to vitamin A. Vitamin A promotes healthy vision and ensures              proper immune function. The beta-carotene in pumpkin may also reverse skin damage caused by the sun and act as an anti-inflammatory. Alpha-carotene is thought to slow the aging process and also reduce the risk of developing cataracts and prevent tumor growth. Carotenoids also boost immunity and lessen the risk of heart disease
